The wine is made in a light - hearted style using the classic cold carbonic method. The winery harvests the berries as whole clusters and adds them to a stainless - steel tank filled with CO2. This starts fermentation inside the cells, instead of crushing the grapes and relying on wild yeasts. The result is a wine with low tannins, bursting with red and light - blue fruit flavors, and a hint of cinnamon, a typical sign of carbonic maceration.
