Domaine Chiroulet is now owned by fifth - generation winemaker Philippe Fezas, an agricultural engineer and oenologist. Since taking over from his grandparents in 1993, he's elevated the winery while practicing regenerative farming to boost the local environment. 'Java Blanc' is fermented in stainless steel tanks.
