Raul Perez, the winemaker at Castro Ventosa, is super passionate about Mencia. He makes sure to show the pure flavor of Mencia and the region. This wine is fermented in stainless - steel tanks and then aged in 5,000 L oak vats for 3 months. Despite malolactic fermentation, it's fresh with minimal oak flavors. It's fruit - forward and has balanced graphite notes. Pair it with your favorite venison, poultry, or veal dishes.
To enjoy this Castro Ventosa Mencia Joven wine, first, let it breathe for about 15 - 20 minutes before serving. You can pour it into a decanter or just leave the bottle open. Serve it at a cool room temperature, around 60 - 64°F. It pairs really well with venison, poultry, or veal, so plan your meals accordingly. When storing, keep the bottle in a cool, dark place.
